Banana and Date Bread and Butter Pudding

Bread slices 8
Butter 200 g
Dates 150 g
Bananas (sliced) 5
Eggs 6
Brown Sugar 150 g
Milk 500 ml
Cinnamon 2 tsp


  • Pre-heat the oven to 160oC / gas mark 4
  • Whisk together the sugar, milk and eggs
  • Spread the bread with butter and tear into chunks
  • Pour a little of the milk mixture into the bottom of the dish and then cover with the bread
  • Lay over some banana and dates and then pour over some more of the milk mixture - continue this until all bread is used
  • Pour over any remaining milk mixture (make a few holes if needed so it can really soak in) and leave to stand for 10 minutes
  • Sprinkle with cinnamon
  • Bake in the oven for 30–40 minutes until set


  • For gluten free diets; use gluten free bread
  • For dairy free diets; use a milk substitute
  • For egg free diets; a similar dessert can be made using custard powder
