Ingredients

Stewing Steak 700 g
Onion 2
Vegetable Oil 2 tbsp
Red Pepper 1
Green Pepper 1
Garlic 2 cloves
Tomato Puree 2 tbsp
Paprika 1 tbs
Fresh Tomatoes 2
Herbs 2 tbs
Plain Flour 30 g
Vegetable Stock 300 ml
Fresh Parsley to garnish
Natural Yoghurt 2 tbs

Method

  • Seal the steak in a hot pan or deep roasting tray over a high heat
  • Add the onion and pepper and cook for a few minutes until softened and it starts to colour
  • Add the garlic, spices and herbs and cook for 2 minutes
  • Add the flour and cook for 2 more minutes
  • Add the tomato puree, vegetable stock and fresh tomatoes
  • Cover and cook on a low heat or in the oven 160oC / gas mark 4 for 1½ -2 hours or until the meat is tender
  • Remove from the heat, stir through the natural yoghurt and sprinkle with fresh parsley to finish

Alternatives:

  • For meat free diets; omit the steak and use quorn pieces instead
  • For gluten free diets; use gluten free flour or thicken with corn flour
  • For dairy free diets; use dairy free yoghurt or leave it out
  • For soya free diets; use soya free yoghurt or leave it out
