Ginger and Lime Sponge

Ingredient Qty
Plain Flour 275 g
Baking Powder 1 tsp
Caster Sugar 175 g
Butter 200 g
Eggs 3
Ground Ginger 1 tsp
Limes (Zest and Juice) 3


  • Pre-heat the oven to 180oC / gas mark 5
  • Cream together the butter and sugar until it is light and creamy
  • Slowly mix in the eggs and add the lime zest, some of the lime juice and ginger
  • Fold in the flour then turn mixture out into a lined tin
  • Bake in the oven for about 30 minutes
  • Remove from the oven and allow to cool for 5 minutes
  • Stab several times with a fork and then pour over the remaining lime juice
