Ham and Leek Potato Bake

Ingredient Qty
Potatoes (thinly sliced) 700 g
Leeks (chopped) 2
Ham 110 g
Plain Flour 50 g
Milk 500 ml
Butter 50 g
Grated Cheese 85 g


  • Pre-heat the oven to 180oC / gas mark 5
  • Place the potatoes in a pan of water and bring to the boil – cook until soft, but not cooked through
  • Drain the potatoes and leave to steam dry for a few minutes
  • Melt the butter in a pan, remove from the heat and stir in the flour
  • Slowly whisk in the milk and then return to a medium heat, whisking until sauce thickens and starts to boil
  • Mix half of the cheese in to the sauce
  • Mix the leeks and ham with the potatoes, then place in to an oven proof dish
  • Evenly pour over the sauce, then sprinkle over the remaining cheese
  • Bake in the oven for 30 minutes until potatoes are cooked and cheese is bubbling and golden


  • For gluten free diets; use gluten free flour or thicken with corn flour
  • For dairy free diets; use dairy alternatives for milk and cheese
  • For vegetarian diets; omit the ham and add some kidney beans
