Egg 1
Self Raising Flour 275g
Butter 250g
Cheddar Cheese 100g
Cherry Tomatoes (chopped) 125g
Spring Onions (chopped) 5
Mangoes (peeled and chopped) 2
Red Onion (chopped) 1
Apple (chopped) 1
Fresh Chives 2 tbsp
Vegetable Oil 1 tbsp
Cream Cheese 125g
Black Treacle 1 tbsp
Balsamic Vinegar Dash


  • Pre-heat the oven to 190°C /Gas Mark 5 
  • Combine the flour, butter, egg and cheese to form a batter
  • Fold in the spring onion and cherry tomatoes
  • Divide into muffin cases and bake for 25 minutes until firm and browning
  • Remove and cool on a wire rack
  • Meanwhile, add the red onion, mango and apple to a hot pan with a little oil
  • When the onion turns really brown, add the black treacle and a splash of balsamic vinegar, (if it starts to turn too sticky add some water) and leave to simmer for 5 minutes
  • Place the cream cheese and chives into a blender and blitz until thick and green
  • Once the cakes are baked and cooled frost the tops with chives and cheese icing
  • Serve with the onion mix on the side
