A light dusting
1. Heat oven to 180C /170c Fan/ Gas4.
2. Weigh out ingredients
3. Mix the sugar and butter together until smooth.
4. Add the lemon juice and zest, stir in well.
5. Add the flour.
6. Dust a clean surface with flour and roll out the shortbread.
7. Cut out shapes using a 6cm cookie cutter or into fingers.
8. Place them individually on a baking sheet, and chill them.
9. Bake for 12-15 mins, cool, dust lightly with icing sugar.
